静岡県は、日本のお茶の40％以上の生産量を誇る日本最大のお茶産地です。県内には、お茶の栽培に適した自然環境を活かした銘産地が並んでいます。山間地で育つ川根・本山茶は高級煎茶の産地として特に有名です。また菊川、小笠、榛原、牧の原地域では深蒸し茶が多く生産されています。

緑茶のカフェインには利尿作用があり、タンニンには鉄と結合するとタンニン鉄となり、鉄吸収を妨げます。そのため、貧血や、貧血気味の場合は、食事中の緑茶は避け、食事以外の時間帯（食後1時間後から）にとるようにしましょう。
健康な成人男性は1日400mg以下、女性は300mg以下が適量とされています。緑茶（煎茶）であれば、1日5杯（1L）くらいまでであれば、飲んでも問題ありません。

日本茶の三大産地は、静岡県、鹿児島県、三重県です。

2020年の栽培面積は、静岡県が15,200ha（39%）、鹿児島県が8,360ha（21%）、三重県が2,710ha（7%）
