ソーキそばは、沖縄県の郷土料理で、沖縄そばの一種です。豚のあばら骨部分（スペアリブ）を甘辛く煮込んでトッピングした麺料理で、沖縄の方言で「ソーキ」と呼ばれています。

沖縄そばの具は豚肉（三枚肉）の味付けしたもので、ソーキそばは、三枚肉の代わりに豚の骨付き肉を味付けしたものです。

本部町は沖縄本島で唯一、カツオ漁が盛んな町です。例年、ゴールデンウィーク頃に初水揚げが行われ、町全体がカツオで活気づきます。
