鱸(スズキ)の旬は、地域や気候にもよりますが、一般的には秋から冬にかけて、特に9月から12月にかけてが最も美味しい時期とされています。この時期には水温が下がり始め、スズキは脂肪を蓄え始めるため、身が引き締まりながらもジューシーで、独特の旨みが増します。

また、スズキは、年間を通じて釣れる魚であり、夏に釣れるスズキも美味しいとされていますが、脂の乗りは秋冬にかけてが最高とされています。
